Ingredients

  • 2 zucchini
  • 1 roll puff pastry
  • 2.8 oz bacon
  • 2 eggs
  • 1.4 oz grated parmesan
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

How to Prepare Zucchini Puff Pastry with Bacon and Parmesan

  • Slice the zucchini into rounds, then sauté them in a pan with a drizzle of oil and a clove of garlic. Salt and pepper to taste and continue cooking for another 5-6 minutes on low heat, stirring occasionally.

  • Unroll the puff pastry and place it in a baking dish, separately beat 2 eggs with milk and half of the grated parmesan.

  • Spread the zucchini over the pastry, add the diced bacon.

  • Add the diced bacon and finally the egg mixture. Finish with parmesan and bake at 375°F for about 25-30 minutes or until golden.

Storage and Tips for Zucchini Puff Pastry with Bacon and Parmesan

Store the savory pie in the refrigerator for up to 2-3 days, covered with plastic wrap. You can add cured meats like salami, cooked ham, and speck to make it even more flavorful. Add 2 tablespoons of stracchino to the eggs for a creamier texture. Besides parmesan, you can add cubes of scamorza.
