Low-temperature cooking, also known as vacuum cooking or “sous vide,” is a cooking technique that involves cooking food at temperatures generally between 122°F and 176°F with much longer cooking times than traditional methods.

The principle behind this technique is packaging the food in a vacuum bag, which is then immersed in a water bath maintained at a constant temperature.


This cooking method allows maintaining the natural nutrients and flavors of the food, preventing overcooking and moisture loss.
This technique can be applied to a wide range of foods, including meat, fish, eggs, vegetables, and fruit.

Ingredients for preparing low-temperature turkey legs

  • 4 turkey legs (hen)
  • 2 cloves garlic
  • 1 sprig rosemary
  • 6 leaves sage
  • to taste thyme
  • to taste salt
  • 1 tsp whole black pepper
  • 3 tbsps extra virgin olive oil
  • 1.1 lbs potatoes
  • 1.1 lbs sweet potatoes (or American potatoes)

Preparation of low-temperature turkey legs

  • Take the turkey legs remove the skin, then wash them under cold running water.

  • Finely chop the aromatic herbs, pat the meat dry with kitchen paper, and vacuum seal them seasoned with the mix of herbs, salt, and pepper.

  • Set the oven temperature between 140°F and 176°F. Higher temperatures (176-194°F) are indicated for larger cuts of meat or fish.

    Chicken and turkey: temperature between 149-167°F.

  • Place the bag on a lightly oiled baking tray, avoiding sealing the oven completely to allow slow air circulation.

  • Accurately calculate the cooking time, for 4 turkey legs it will take approximately 3 hours.

    Naturally, it will be much longer than traditional methods (often several hours), but you will see that the result will be exceptional.
    Constantly monitor the internal temperature of the food with a kitchen thermometer to ensure it remains within the desired range.

  • At the end of cooking, place the bag in very cold water to abruptly lower the temperature.

    In the meantime, peel the potatoes and cut them into wedges, wash and dry them, then season with salt, pepper, and olive oil.

  • Remove the turkey from the bag, place the legs in a baking dish along with the potatoes.


    Drizzle them with soy sauce, honey, and balsamic vinegar previously mixed with the help of a kitchen brush.

  • Bake at 428°F for 30 mins to obtain a crispy golden crust.
