Easy Sandwich Cake
In the summer, I love sandwiches. This super soft sandwich cake is inspired by the sandwiches from Chalet Ciro in Mergellina, Naples (those from Naples know what I’m talking about). It’s amazing and simple to make at the same time and, of course, no baking is needed, BUT there is a SECRET that makes it super soft: it must always be wrapped in a damp towel and kept in the fridge.
The sandwich cake is very easy to prepare, ready in 10 minutes. It can serve as a cold appetizer, main course, or single course.
Ideal to prepare for a summer brunch, a picnic at the beach/mountains, or a summer aperitif.

Ingredients for the Easy Sandwich Cake
- 8.8 oz white sandwich bread (I use Morato spuntinelle without crust, long format)
- 1.5 cups mayonnaise, industrial (I use Kraft)
- 5.3 oz cooked ham (sliced)
- 12.3 oz mozzarella (sliced)
- to taste lettuce, cherry tomatoes, radishes, olives, etc. (to decorate the surface as desired)

- Towels linen, lint-free
Steps for the Easy Sandwich Cake

Take a rectangular tray and lay down the first long slice of crustless sandwich bread, spread a layer of mayonnaise, and cover with slices of ham and mozzarella.
Proceed in this way with the other layers, which should be 5 in total. Cover the last layer only with mayonnaise and decorate the surface as you like (with lettuce, tomatoes, radishes, olives, etc.). Then cover everything with a damp and wrung-out towel (or damp parchment paper).
Keep the sandwich cake in the refrigerator, always covered with the moist towel, and take it out 10 minutes before serving.
Notes and Tips
Of course, you can also enrich the sandwich cake with tuna, boiled eggs, tomatoes, olives, etc., BUT I assure you that this cake is delicious and appetizing just as it is, in its simplicity.
It’s important that the cake is always covered with a very moist towel.
