- 1.1 lbs green beans
- 3 potatoes

Let’s start preparing the Boiled green beans and potatoes. Wash the potatoes, peel them, and cook them for about 40 minutes once the water starts boiling. If you are in a hurry, you can peel the potatoes, slice them, and cook them for 15 minutes once the water starts boiling. Alternatively, you can cook them in a pressure cooker; I cook them in a steam basket, cut into pieces. Once the pot reaches pressure, 20 minutes is enough.
Trim the ends of the green beans and wash them thoroughly under running water. Put them in a pot with cold and lightly salted water and cook them for 10 minutes from when the water starts boiling. If you use the pressure cooker, cook them for 5 minutes from the time it starts whistling, then turn off the heat, let the pressure release from the pot before opening the lid, then drain and let them cool.
Then pour the potatoes, green beans into a bowl and season with salt, pepper, extra virgin olive oil, and a teaspoon of pesto. Mix everything well so the pesto flavors the potatoes and green beans well.
