Quick Puff Pastry with Zucchini and Sausage

A quick idea ready in 20 minutes for a tasty appetizer with the quick puff pastry with zucchini and sausage!

I used a roll of puff pastry that I almost always have in the refrigerator, a leftover piece of zucchini cut into julienne strips, and a little sausage left from a white sauce for the pasta I made for my son Andrea.

These are easy puffs, quick finger foods that can be made a little in advance, and you can also make them a result of a personal fridge-clearing effort, perfect for the savory appetizer buffet!

I wanted to use some cookie cutters but couldn’t find the smallest one (too many kitchen and baking tools scattered around, alas) so I used a glass, pressing it well onto the puff pastry that I left protected by parchment paper.

Ingredients

  • 1 package puff pastry
  • to taste zucchini
  • to taste sausage (leftover or just browned without fats in a pan)
  • to taste cherry tomatoes
  • to taste provolone (scamorza Galbanino etc.)
  • to taste salt

Steps

  • 1) Very simply, I preheat the oven to 375°F and trace many circles with a glass or cookie cutter, and with one package, I made (reusing the leftover dough) about 12 round puffs!

  • 2) I julienne the washed zucchini and slice the cherry or datterino tomatoes into pieces as desired.

    3) I quickly brown the sausage in a pan without adding fats or … use the leftover one I have in the fridge.

    4) In a bowl or the small pan where I cooked the sausage, I also add the zucchini strands and tomato pieces.

  • 5) I make a few holes with the tines of a fork on the finger food puffs and add a tablespoon of filling to the center.

    6) I cut the provolone slice(s) into strips and add some pieces to the zucchini, sausage, and cherry tomato filling.

    7) I add a pinch of salt, a drop of Evo oil (just one), and bake for about 20 minutes or according to the characteristics of your home appliance.

    8) I take them out, put them on a serving plate and bring them to the table. Just enough time to cool slightly, and … enjoy your meal with the quick filled puffs or puff pastries!

It’s a recipe that really lends itself to using leftover cold cuts and cheeses that we find in the fridge but also ragù, sausage, mushrooms … in short, once you’ve made the circles in the puff pastry, feel free to get creative with the filling!
