Sardinian gnocchetti with zucchini, cherry tomatoes, and turmeric, a spice also known as the poor man’s saffron,
It’s a simple yet characterful dish: my Sardinian gnocchetti with vegetables and turmeric is perfect when you want to serve something flavorful and different. They are easy to prepare and will win you over with the spicy aroma of turmeric, a spice rich in benefits and widely used in the East.
A main dish with a regional shape, the malloreddus or Sardinian gnocchetti with zucchini, tomato, and turmeric.
The malloreddus are a particular and typical shape of traditional Sardinian cuisine made with semolina flour and water with a characteristic shape.
The turmeric is often used in cooking preparations because it adds flavor and aroma, besides releasing a pleasant warm golden color.
WARNINGS AND ADVICE FOR USING TURMERIC
Even though turmeric is considered a spice without side effects, it is good to follow these general guidelines:
1) Use only organic turmeric powder or ensure it comes from well-known companies to avoid alterations and various contaminations;
2) Avoid using curry powder as a therapeutic remedy because it contains small quantities of curcumin (2%);
3) Do not overdo the quantities but stick to the dosages indicated on the packages and seek the preventive opinion of the doctor;
4) Be careful when handling it in powders, tinctures, and liquid extracts because they can irreparably stain all surfaces they come into contact with.
These gnocchetti with cherry tomatoes, zucchini, and turmeric are a dish that can also be served cold since we are quickly approaching summer and we are all looking for simple dishes that are great even under the umbrella.

Steps
1) First, I wash the zucchini, remove the ends, and slice it.
2) I also wash and slice the tomatoes chosen for the gnocchetti malloreddus topping.
3) In a pan, I add a couple of tablespoons of extra virgin olive oil, add the garlic, and once it’s golden, add the zucchini to the pan, letting them flavor well for 5/6 minutes.
4) In another pan, I brown the bacon without adding any extra fats, and once browned, I add it to the already prepared vegetable topping. I also add the turmeric and, with the flame off, add the mascarpone, mixing the topping well.
5) In a large high-edged saucepan, I cook the Sardinian pasta in salted boiling water.
6) I drain the pasta al dente and moist and add it to the topping, tossing the pasta and mixing the vegetable and bacon sauce well before serving the main dish.
7) If I add grated Parmesan or Grana, the Sardinian gnocchetti malloreddus becomes even more delicious, and there’s nothing left but to wish you …

1) If you want to make the topping creamy, I recommend blending a portion of the zucchini and adding it to the topping!
