Steps for Cabbage Dome with Potatoes and Sausage

  • Let’s start with the cabbage. Remove the outer leaves and the central core. Blanch in boiling water for 5 minutes. Dip the leaves in ice water and dry them well with paper towels.

  • Prepare the filling. Cut the leek and stew it with a little oil. Season with salt, pepper, and thyme. Cut the potatoes a bit thick, about 0.5 cm (0.2 inches) and brown them on both sides with a drizzle of oil. Add a splash of water to finish cooking, about 6/7 minutes. Move on to the sausages, remove the skin, place them in a bowl, where we will add the leek, and the less pretty cabbage leaves, which we have cut thin.

  • Assemble the dome. Line a bowl about 20 cm (8 inches) in diameter with plastic wrap. Line it with cabbage leaves, then add a layer of potatoes and above that the sausage, finally add the gorgonzola in chunks. Cover everything with a cabbage leaf and repeat, there should be 2 layers. Tightly close the dome with the plastic wrap and place it in the freezer for 1 hour.

  • On a cutting board, arrange some kitchen twine, place the dome in the center, leaving the closure facing up. Tie it with the twine and place it in a pot with vegetable or meat broth, and a pinch of herbs. Bake at 180°C (356°F) for about 1 hour. It should reach a temperature of 70°C (158°F) at the center. Once ready, drain it from the broth and let it cool for 15 minutes.

  • Prepare the fondue. Put the gorgonzola and milk in a saucepan and let it melt. Glaze the dome with oil and decorate with chopped chives. Serve with the gorgonzola fondue.
