- 1/2 packet baking powder
- 1/2 cup extra virgin olive oil

Cookie steps
Beat the egg with the sugar until you get a thick and frothy mixture. In a bowl, put the sifted flour with the baking powder, add the beaten eggs, the oil in which the essential oil has been dissolved, the rice milk. Mix until you get a homogeneous dough. Wrap the dough with cling film and let it rest in the fridge for about 30 minutes.
Take the dough and roll out a sheet 1/5 inch thick. With a round cookie cutter, cut many discs. In half of these, make a central hole with a smaller diameter cookie cutter.
On a baking tray lined with parchment paper, place the cookies and bake in a hot oven at 356°F for about 12 minutes. Remove from the oven and let cool. Fill with orange marmalade, overlapping a whole disc with a perforated one.
