  • 3 eggs
  • 1.75 cups all-purpose flour
  • 3/4 cup semolina flour
  • 1 drop lemon essential oil (edible)
  • 1 drop orange essential oil (edible)
  • to taste salt
  • 1 egg yolk
  • 3.5 oz goat cheese (fresh)
  • 10 sprigs chives
  • 1 tbsp poppy seeds
  • to taste extra virgin olive oil

Steps

  • Prepare the pasta: Put the sifted flour in the stand mixer, add a pinch of salt and add 2 eggs, one yolk, and the grated zest of lemon and orange. In the remaining egg white, put the essential oils, mix and add it to the mixture. If it turns out too hard, add a little warm water, otherwise, add flour if it’s too soft. Let the dough rest, covered with plastic wrap for about 30 minutes in the refrigerator

  • Roll out the dough with the pasta roller, to a thickness of about 1/8 inch. Fold the dough over itself then cut it to obtain tagliatelle. Boil the pasta in salted boiling water for a few minutes.

  • Then drain and season hot, in a pan with a drizzle of oil or butter and goat cheese cut into chunks, if necessary add a little cooking water to facilitate the melting of the cheese, mix. Sprinkle with grated Parmesan cheese, chopped chives, and poppy seeds, serve.
