The apple cake with raisins and pine nuts is a soft dessert that I prepared for tomorrow morning’s breakfast 🙂
Apple is one of my favorite fruits that I consume every day, and since I have a few to use up, I made jams, fruit salads, and now I dedicated myself to the preparation of a dessert.
This apple cake is enriched with raisins and pine nuts.
If you don’t have fresh ginger and cinnamon, you can use powdered ones.
It came out not very sweet because I added little sugar, but those who prefer can increase the amount.
As soon as it came out of the oven, I wanted to taste it to see how it came out: what can I say? It’s delicious, so here is the recipe for you to try it too 😉

Ingredients for the Apple Cake with Raisins and Pine Nuts
- 2 cups g all-purpose flour
- 3 apples
- 3/4 cup raisins
- 1/4 cup g pine nuts
- 5.3 oz g Greek yogurt
- 1/3 cup g brown sugar (+ one tablespoon for the apples)
- 1/4 cup ml water
- 3 tbsps ml vegetable oil
- 1 package baking powder
- 1 tsp cucchiaino fresh ginger (chopped)
- 1/2 tsp cinnamon stick (chopped)
- to taste lemon juice
- to taste powdered sugar

- 1 Parchment paper
- 1 Cake pan
Steps for the Apple Cake with Raisins and Pine Nuts
Soak the raisins in a small bowl full of lukewarm water for at least an hour.
Peel the apples and cut them into pieces.
Place them in a bowl with lemon juice, the tablespoon of brown sugar, chopped ginger, and cinnamon. Stir with a spoon.
In a large bowl, pour the flour, brown sugar, baking powder, and stir with a spatula.
Add the Greek yogurt, oil, and water gradually.
Add the pine nuts, the raisins after drying and lightly flouring them, and continue to stir with the spatula.
Line a cake pan with parchment paper and pour the mixture.
Preheat the oven to 350°F in static mode and bake the cake for about 50 minutes.
Once cooled, sprinkle with powdered sugar to taste.
