GLUTEN FREE HEART COOKIES WITH FILLING, heart-shaped cookies perfect for gifting on Valentine’s Day, Mother’s Day, birthdays. They can also be given to a dear friend to show them our affection, or as a gift to ourselves for a little treat. Soft and crumbly shortcrust base, for the dough I used gluten-free flour, and hazelnut flour.
Once baked, they are filled as desired with jam, raspberries or strawberries, Nutella or cream, your choice, and finally paired together to create these delicious heart cookies. Beautiful and super tasty, we are talking about an easy and quick recipe. The shortcrust pastry is designed for those with gluten issues. To make them, you will use 2 heart-shaped cutters, one larger and one smaller, to cut out the cookies and create the center through which the filling will be visible.

Ingredients for Gluten Free Heart Cookies with Filling
- 2 1/2 cups flour (gluten-free)
- 1/2 cup extra virgin olive oil
- 2 egg yolks
- 1 cup powdered sugar
- lemon (grated zest)
- 1 teaspoon vanilla extract
- 1 pinch salt
- to taste raspberry jam
- 1 cup hazelnut flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar

Steps for Gluten Free Heart Cookies with Filling
Let’s start with the dry ingredients, which we’ll place in a bowl. Mix the powders well, add the oil and eggs. Knead until you obtain a smooth and malleable dough. Let it rest for 30 minutes in the fridge
Roll out the shortcrust to a thickness of about 1/5 inch, using a rolling pin on a pastry board. Start cutting the cookies with a heart-shaped cutter. You’ll get about twenty cookies, from which we’ll make a hole in the center with a small heart-shaped cutter with a 0.4 inch diameter, and another twenty that we’ll leave as hearts without a hole.
Place the cookies on a baking sheet covered with parchment paper and bake in the oven at 350°F for about 12/15 minutes, until they are golden. Remove from the oven and let cool.
Assemble the cookies: Take the cookies without a hole and cover them with a layer of raspberry jam. Place the cookies with the heart-shaped cutout in the center on top, and dust with powdered sugar.
Storage, Notes, Variations, Gluten Free Cookies with Filling
If you have hazelnut flour at home, simply blend whole hazelnuts into a powder. Instead of jam, you can use any spreadable cream of your choice. Once ready, they can be stored for about a week in a sealed container.
