DARK CHOCOLATE WITH CANDIED ORANGES. Chocolate oranges are not easy to find, so I thought why not make them myself, but in a more personal version. Every bite of delicious chocolate is topped with some crunchy almonds and a bit of Maldon salt, and naturally slices of caramelized orange, because sweet and salty together are the best.

This chocolate is quite simple to make, the oranges need to dry for at least 8 hours after being boiled in sugar water for about half an hour, they should have a chewy texture. After that, we melt the chocolate, add a bit of cinnamon and nutmeg, and spread it on a baking tray. Then we add the candied oranges, sprinkle with chopped almonds and Maldon salt flakes, put the tray in the fridge for about 30 minutes. Steps for Dark Chocolate with Candied Oranges

  • Let’s prepare the candied oranges: Wash and cut the oranges into slices but divided in half, with a thickness of 1/8 inch, and put them in a pot with cold water. Bring to the fire and as soon as it boils, discard the water, repeat this process 3 times. In the same pot add the water, sugar, and glucose, bring to a boil. Stir gently, keep the flame moderate and skim if necessary. Continue cooking for 15 minutes. Turn off and let cool. Bring back to a boil, wait 3 minutes and turn off. Let cool, leave the pot in the fridge for at least 8 hours

  • Bring oranges and syrup to a boil, continuing to cook for about 1 hour, until you get a thick syrup and translucent orange slices. Drain the orange slices and let them dry on a non-stick tray for about 12 hours. Filter the syrup that you can store in the fridge in sterilized containers, it can be used as a cake soak or enrich other recipes. To speed up the process, you can bake the orange slices at 230°F for about 1 hour.

  • Prepare the chocolate: Break 2/3 of the chocolate into a pot and melt it in a double boiler (or in the microwave at 500 W), stirring every 30 seconds. The chocolate should melt slowly and not exceed about 113°F. Then incorporate the remaining chocolate and stir until the temperature drops to 88°F. At this point add the cinnamon and nutmeg, stir. The chocolate is now ready to be used.

  • Assemble. Take a baking sheet lined with parchment paper and pour the melted chocolate over it. Level it with a spatula into an even, but rather thick layer. Randomly place the orange slices, sprinkle the chopped almonds around the oranges, and add the Maldon salt. Put the chocolate in the fridge for about 20 minutes, then lift the mixture from the tray and place it on a cutting board, use a sharp chef’s knife to cut the chocolate into the size and shape you desire

Storage for Dark Chocolate with Candied Oranges

The chocolate can be stored in an airtight container at room temperature for up to 2 weeks. If the oranges become sticky, place parchment paper between each layer of chocolate to prevent them from sticking together. If you want to give it as a gift, just put it in transparent food bags.
