Today I present you this recipe for a Breakfast of Oat Flakes, Milk, and Greek Yogurt, a sort of Porridge that is prepared in no time, rich in energy and flavor, the CREME CARAMEL FLAVORED OVERNIGHT OATS, the delicious pudding our mom made for us when we were kids.

A nice bowl of this dessert of Anglo-Saxon origin and we will be ready to face the day’s challenges, whether in the office, at school, at home for housework, or for those who can afford it, to be tourists in villages and cities.
For those who don’t know, the Overnight Porridge is a variant of the classic Anglo-Saxon recipe that does not require cooking, perfect for those who have little time or don’t want to cook. It is prepared in advance, usually the night before, left in the refrigerator overnight, and ready to enjoy with the topping of your choice in the morning.

An easy recipe: the oat flakes are mixed together with milk or water, Greek yogurt, flavored to taste with vanilla, and sweetened with honey. Once the mixture is blended, there will be no need to cook it, it will simply be stored in the fridge to rest for at least 4 hours, preferably overnight.
Once ready, you only need to choose whether to layer it or not with yogurt of your favorite taste, spreads, and top it with the topping you prefer because there are infinite possibilities, all delicious.

Ingredients

  • 1/2 cup water (or plant-based drink or cow's milk)
  • 1 tbsp honey (or maple syrup)
  • 1/2 cup non-fat Greek yogurt
  • 2.5 oz custard (or vanilla protein cream)
  • 1 oz caramel
  • sliced almonds (for decoration)

Steps

  • In a bowl, mix together rolled oats, honey, yogurt, and almond milk (or cow’s milk or other plant-based drink) until combined. Transfer the mixture to a single-serving cup and refrigerate for at least 4 hours, preferably overnight.

  • After resting, finish the preparation. Prepare the caramel (find the procedure at the bottom in the notes) and let it cool. In the meantime, add the protein cream (or custard) to the Porridge and mix until blended. Divide into two single-serving cups, level with the back of a spoon.

  • Finish with a layer of previously prepared caramel and decorate with some sliced almonds. Leave in the fridge to solidify for a couple of minutes: it will remind you of the taste of the Creme Caramel pudding, a childhood memory for many of us.

NOTES

WATER For even creamier porridge, you can replace the water with an equal amount of cow’s milk or a plant-based drink (soy, almond, oat, rice).

HONEY You can replace honey with maple syrup or sweetener, for a light version.

VANILLA It’s amazing how a pinch of this essence can enhance the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to blend and the oats to soften to the perfect consistency.

PROTEIN CREAM: In this recipe, I used a vanilla protein cream that tastes very similar to custard, but if you want to try making the latter, you can find the recipe HERE.

CARAMEL: If you don’t have time or don’t want to prepare it, you can buy it ready-made or replace it with a protein caramel cream.

Caramel Preparation

Pour 135g of sugar into a small saucepan with a thick bottom and cook over medium-low heat until the sugar begins to dissolve. Swirl the saucepan often to prevent the sugar from burning on the edges. Meanwhile, heat 100ml of fresh liquid cream. As soon as the sugar is completely dissolved and has an amber color, lower the heat and add 65g of butter.

Quickly stir with a whisk until the butter is completely melted, then pour in the hot cream. Stir with a whisk until smooth, then transfer it to a jar and let it cool first at room temperature and then in the fridge.

STORAGE

The Creme Caramel flavored OVERNIGHT OATS can be prepared the night before for the next day, and it will be even better. Once ready, it can be stored in the fridge in a closed container for up to 2 days.
