Do you still have some panettone at home and don’t know how to use it up? Here’s a quick idea, the panettone roll with mascarpone and Cointreau!!! It prepares in a few minutes, a few hours in the fridge and it’s ready!!! A soft panettone roll filled simply with mascarpone and Cointreau (orange liqueur) that recalls the taste of candied orange. I didn’t want to add other ingredients so as not to overpower the taste and not to make it too heavy. Try other creams with mascarpone, they are easy and delicious!!!

- 17.6 oz panettone (6 slices)
- 8.8 oz mascarpone
- 0.7 oz powdered sugar
- 1/4 cup Cointreau
- orange (for decoration)

To prepare the panettone roll with mascarpone, take the panettone, remove the cap, and cut six rectangular slices about half an inch thick.
Spread out the plastic wrap on the table or work surface, place the six slices of panettone on top in two rows, overlapping the edges by about half an inch. Then, using the rolling pin, press them well to get a base to fill.
Pour the liqueur into the small bowl and use the brush to moisten the slices of panettone to soften them. Keep a few teaspoons to pour into the mascarpone.
In a bowl, pour the mascarpone, powdered sugar, and a few teaspoons of orange liqueur. Mix everything well with the electric mixer or hand whisk, and with the spatula, spread the cream on the panettone base.
Using the plastic wrap, help yourself to roll the panettone slices from the short side to form a roll (10 inches). Seal it well and let it rest in the fridge for at least 2 hours.
After the resting time in the fridge, gently remove the plastic wrap, transfer it to a serving plate, dust it with powdered sugar, and decorate with orange zest.
Variation
Similarly, you can prepare a roll with pandoro. If you don’t have Cointreau, you can substitute it with another liqueur or, if you don’t want to use an alcoholic syrup, you can use orange juice.
Storage
It keeps for 3/4 days in the refrigerator wrapped in plastic wrap or inside an airtight container.
