Steps for sweet fritters with pears and rum yogurt
Peel the pears, cut them into small cubes, and place them in a bowl, pour the lemon juice so they don’t darken, then add the sugar and mix well.
While stirring, add the eggs, oil, rum vial, and yogurt, work the mixture well.
Finally, add the sifted flour and baking powder, mix until you obtain a good, soft, and compact dough that can be picked up with 2 teaspoons, adjust if needed.
Take a pot with high edges, or a small but tall pan, pour in plenty of seed oil and bring it to a temperature of about 340°F.
When you notice that the oil is hot but not too much, start frying.
With the help of two teaspoons, pour the batter into the hot oil, the fritters should gradually brown and have time to cook inside, remember to keep the flame low, turn them well during cooking and when they are well browned, drain them on absorbent paper.
Open and check the inside of a few fritters to see if they are well cooked and dryIf the oil gets dirty between one frying and another, gently clean the surface with a strainer to remove residues and proceed. Don’t make large spoonfuls because they increase in volume a little with cooking, better small and well-cooked inside.
