Steps for Almond Shortbread Star Cookies
In a bowl, work the butter with the powdered sugar until you get a creamy mixture. Add the egg and the yolk and mix until incorporated. Sift the flours and add them to the mixture, mixing until you get a homogeneous dough. Wrap the dough in cling film and place it in the refrigerator for at least 30 minutes.
After the resting time, roll out the dough on a lightly floured surface to a thickness of about 0.2 inches. Cut out star-shaped cookies with a cutter. Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F for about 12 minutes, or until they are golden. Let the cookies cool on a rack before filling them. Serve with a dusting of powdered sugar

Storage, Tips, Almond Shortbread Star Cookies
Almond shortbread cookies keep for about 3-4 days in an airtight container at room temperature. To prevent them from drying out, store them in a cool, dry place. If you’d like to store them for a longer period, you can freeze them. To do so, place the cookies on a tray lined with parchment paper and freeze for at least 24 hours. Once frozen, transfer the cookies to a food bag or airtight container and keep them in the freezer for about 2 months. When you’re ready to enjoy them, let the cookies thaw at room temperature for about 30 minutes before serving
