- 1 1/4 cups all-purpose flour
- 1 1/4 cups ground almonds (with skin)
- 7 tbsp sugar
- 6 tbsp butter
- 1 egg (medium)
- 2 tsp baking powder

Grind and finely powder the almonds with their skin together with the sugar until you get a floury mixture.
You can use a Thermomix or any other food processor or blender, or use ready-made almond flour.
Pour everything into a bowl and then add the all-purpose flour and baking powder, mix the powders well.
Add the egg, softened butter, and half a vial of almond flavoring, mix and knead everything well.
Once you have obtained a homogeneous mixture, take small pieces of dough and form many balls, the size of a walnut.
Place them on a baking sheet lined with parchment paper, spaced apart, and decorate each one by inserting and embedding an almond in the center of each cookie.Now let the balls firm up and rest for about 30 minutes in the fridge, adjust beforehand to the size of the baking sheet to use. (Otherwise, it may not fit in the fridge)
Take the baking sheet from the fridge, sprinkle the cookies with a little powdered sugar, place the baking sheet in the middle of the already preheated oven and bake the amaretti at 356°F convection for about 10-12 minutes, no longer otherwise they harden.
