Preparation
To prepare the salmon and spinach balls…
Wash the spinach, rinse them and place them in the salad spinner to remove excess water.
In a frying pan, add the extra virgin olive oil and the washed spinach. Cook them on high heat for a few minutes until they are wilted and dry.
Then take the salmon fillet, remove any remaining bones and skin, cut it into pieces, then place it in the food processor or blender.
When the spinach is also cooked, add them to the salmon in the food processor and blend until the ingredients are finely chopped.
Transfer the mixture to a bowl, add salt and pepper, and add the breadcrumbs. Mix well and form the balls.
Finally, place the balls in the basket of the air fryer or on the baking sheet, both lined with parchment paper, and cook for 15 minutes at 392°F. For oven baking, it should be preheated, and the cooking mode should be set to convection.
Serve the salmon and spinach balls hot as you prefer.
