Curry Tofu with Rice

The curry tofu with rice is a vegan main course, easy, quick, and fragrant. Golden cubes of tofu (soy-based preparation) are simply sautéed in a pan with curry, a very aromatic and fragrant spice mix. For this recipe, I decided to accompany it with basmati rice, with its long and slender grain. If you want, you can enrich the dish with your favorite vegetables, such as diced vegetables in a pan

Ingredients

  • 7 oz tofu
  • 3/4 cup basmati rice
  • 2 fresh scallions
  • 2 tbsp extra virgin olive oil
  • to taste curry
  • to taste fine salt
  • to taste black pepper

Preparation

To prepare the curry tofu with rice…

  • First, in a pot, heat the water to cook the rice. When the water boils, pour in the basmati rice and cook it on high heat for the minutes indicated on the package.

  • While the rice is cooking, clean the scallions and slice them, setting aside the green part that you will use to garnish the dish at the end.

  • In a pan, heat the extra virgin olive oil and brown the sliced scallions over low heat. Then, also cut the tofu into cubes about 1/2 inch.

  • When the scallions are slightly golden, add the tofu cubes, season them with curry, salt, and pepper, and sprinkle with a little water to mix well with the curry.

  • Cook the tofu with curry for about 10 minutes until it is dry.

  • After the rice cooking minutes are over, drain it well and serve it hot with the curry tofu. Garnish the dish with the green part of the scallions.
