Oatmeal and Hazelnut Cookies

OATMEAL AND HAZELNUT COOKIES are somewhat rustic but very delicious treats perfect to start our day with energy!
The oatmeal flakes and hazelnut flour provide a unique flavor and softness to these delicious treats, which are also perfect for a snack, work break, or as a hunger-buster between meals.
This recipe is very easy and can be made in a few steps, follow my recipe and make them yourself!

Ingredients for Oatmeal and Hazelnut Cookies

  • 2 1/2 cups oatmeal flakes
  • 2/3 cup hazelnut flour
  • 2 eggs (medium)
  • 7 tbsp butter
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • as needed whole hazelnuts (toasted)

Steps for Oatmeal and Hazelnut Cookies

For the preparation of the cookies, use a food processor with blades or a mixer to slightly blend the oatmeal flakes.
If you prefer them whole and coarse, work everything in a bowl with an electric beater or by hand.
In the processor container, work the eggs with the brown sugar for a few minutes, add the softened butter and hazelnut flour, and continue working.
Continue with the oatmeal flakes and baking powder, work the mixture well for a few minutes until it becomes compact and homogeneous.

  • The dough is soft and sticky, wet your hands for handling the cookies.
    Take small balls of dough, give them a round shape, flatten them slightly, and then place them on a baking sheet lined with parchment paper.
    Insert a hazelnut in the center of each cookie and sprinkle with some oatmeal flakes
    (optional).

  • Bake the oatmeal and hazelnut cookies in the preheated oven at 350°F for about 12-15 minutes.
    The baking time depends on your oven’s power, remove them when they are nicely golden.

Tips and Variations

The cookies stay soft for a few days, keep them well-stored in a cookie box.
For an extra touch of flavor, you can also add some dark chocolate chips.
