Creamy chicken scaloppine with champignon mushrooms are a simple, quick, and delicately flavored second course, yet tasty, with the soft and tender consistency of chicken slices perfect especially for those who do not like red meat and want to stay light.

For mushroom chicken scaloppine, I also used champignon mushrooms, which are also very delicate, but sautéed and tasty, that you can always replace with porcini or mixed mushrooms.

  • 3 slices chicken breast
  • 15 champignon mushrooms
  • as needed all-purpose flour
  • as needed olive oil
  • 4 oz butter
  • Half cup white wine (scarce)
  • 2 cloves garlic
  • as needed parsley

Preparation for Creamy Chicken Scaloppine with Mushrooms

  • Let’s start by cleaning the champignon mushrooms.
    Remove the outer skin and gently scrape out the black part inside, wash well under running water and then cut into small slices.

  • In a pan, lightly brown the garlic cloves with some olive oil, add the sliced mushrooms, sauté well over high heat, salt, add some parsley leaves, a bit of water or white wine if you prefer, cover and let it cook slowly until done, about 10 minutes.

  • Now let’s move on to the chicken breasts, coat them well on both sides with flour.
    Melt the butter in a non-stick pan and as soon as it starts to sizzle, add the chicken slices and cook for 2 or 3 minutes per side or until they are golden, salt them and turn them over.

  • Deglaze with white wine, let it evaporate.
    Add the previously cooked champignon mushrooms, mix everything well, finish with chopped parsley and serve hot.
