Bruschettas with Vegan Tuna and Sweet and Sour Onion

The bruschettas with vegan tuna and sweet and sour onion are ideal to serve as an appetizer, starter, or for a quick snack. Golden slices of homemade bread toasted and topped with vegan mayonnaise, freshly prepared sweet and sour red onion, vegan tuna made from wheat and pea flour, and garnished with a caper berry. I tried the recipe for the first time at a vegan restaurant in my area, the Plant Bistrot in Codogno (LO), where you can enjoy many other dishes. Vegan tuna is available ready-made in large supermarkets or specialized stores.

  • 5 slices homemade bread (about 1 oz each)
  • 150 g red onion
  • 60 g vegan tuna
  • 5 pickled caper berries
  • 1 tablespoon white wine vinegar
  • 1 tablespoon granulated sugar
  • to taste vegan mayonnaise
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper

Steps

To prepare the bruschettas with vegan tuna and sweet and sour onion…

  • First, peel the red onion, cut it into not-too-thin slices, and brown it in a pan with extra virgin olive oil. When it is wilted, add the granulated sugar and deglaze with the white wine vinegar, letting it evaporate. Season with salt and pepper when they are soft and dry.

  • Meanwhile, while the onions are cooking, cut the bread slices and toast them on the grill pan or with a toaster.

  • When both the onions and the bread are ready, it’s time to combine the other ingredients. Spread vegan mayonnaise on each slice of toasted bread, top with the sweet and sour red onion, vegan tuna, and garnish with a caper berry.

  • The bruschettas are ready to be enjoyed immediately or even later by first storing them in the refrigerator.
