Quick Light Sandwiches

Our lives are becoming more and more hectic, and ideas for quick and light sandwiches to take for lunch or dinner are never enough.

That’s why I thought of preparing this list with 5 light sandwich recipe ideas for your quick lunch!

I will provide you with quantities and combinations to have in just a few minutes a healthy, light, balanced, but most importantly, tasty sandwich!

Ingredients to prepare 5 types of light sandwiches

  • A few slices rye bread
  • A few slices sandwich bread (also whole wheat)
  • 3.5 oz skyrella
  • 1.8 oz cherry tomatoes
  • 1.8 oz fresh lamb's lettuce
  • 1.8 oz skyr
  • 1.8 oz canned tuna
  • 1.8 oz zucchini
  • 1.8 oz smoked salmon
  • Half avocado
  • 2 eggs
  • Half lime
  • 1.8 oz turkey breast
  • 0.7 oz light cheese slice
  • 1.8 oz bresaola
  • 1.8 oz arugula
  • 0.7 oz parmesan

Combinations to prepare quick light sandwiches

  • Toast the rye bread on the grill. Slice the skyrella and cherry tomatoes. Assemble by adding some leaves of lamb’s lettuce, salt, and a drizzle of olive oil.

    You can replace the skyrella with light spreadable cheese, stracchino, or mozzarella.

  • Toast the cereal bread on the grill, slice the zucchini, and drain the tuna from the water. Grill the slices of zucchini. Assemble by spreading skyr on the bread and adding tuna, zucchini, and a pinch of salt.

    You can replace cereal bread with all-purpose flour bread, rye bread, or an olive roll.

  • Mash half an avocado in a bowl with a fork. Add a pinch of salt, a drizzle of olive oil, coriander, and some lime or lemon juice, then mix the cream. Toast the bread on the grill. Heat a pan with a drizzle of olive oil and cook the egg covered with a lid, so a thin layer forms over the yolk. Assemble by spreading the avocado cream on both slices of bread and completing with the egg and smoked salmon.

    You can omit the egg if you don’t like it or replace it with tomatoes, nuts, or seeds for a vegan alternative. You can also omit the salmon or replace it with tuna.

  • Heat a pan and add a drizzle of olive oil. Break two eggs into a bowl and whisk them with a pinch of salt and some pepper.

    Pour the eggs into the pan and before they solidify, place the two slices of sandwich bread. Once set, flip everything with the help of a lid and add turkey breast and light cheese slice in the middle. Then fold the omelet to form a kind of toast/sandwich. Leave for a few seconds in the pan to allow the cheese to melt a little.

  • Toast the rye bread on the grill. Assemble with slices of bresaola, arugula, parmesan shavings, and a drizzle of olive oil.

    You can replace bresaola with Parma ham and arugula with lettuce.

Tips for quick light sandwiches

These sandwiches are all great solutions to prepare in advance and enjoy as lunch at the office, on the beach, or at home!
