Who says porridge can only be sweet? Discover this savory, tasty, and comforting version of Savory Vegetable Porridge.

The porridge recipe originated in the Middle Ages as a poor dish (originally, it was made only with water and simple oat flakes), economical, extremely simple but nourishing. Today it has become a very famous dish, easy and rich in substance. Many choose to replace water with milk or plant-based beverages to achieve a creamier texture.

But I will show it to you in a savory version. This dish is about to become one of your favorite comfort foods, trust me! 😉

Ingredients for savory vegetable porridge

  • 1 1/4 cups oat flakes
  • 10 1/2 oz mixed frozen vegetables (or fresh)
  • 1 1/2 tbsp extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • to taste salt

Steps for savory vegetable porridge

After boiling the vegetables of your choice, blend them to create a fragrant and tasty cream. Adjust the salt.

Put the vegetable cream in a pot and add a glass of water.

Bring to a boil and add the oat flakes.

Keep on low heat and stir gently for about 10 minutes until the desired consistency is reached. I like it smooth but not mushy.

If it dries too much during cooking, add a bit of water.

As soon as it’s ready, turn off the heat and add the Parmesan.

Mix well and plate. Add raw olive oil directly to the plate.

Tip

After mixing the porridge with Parmesan, before plating, let it rest in the pot for 5-6 minutes. It will gain even more flavor!

You can make this dish completely vegan by omitting the Parmesan or replacing it with nutritional yeast.
