BAKED SWEET RAVIOLI
One of the typical sweets of Carnival is SWEET RAVIOLI, a crumbly pastry that encloses a soft filling of Nutella or Jam, which are usually fried in oil.
However, there is a version of this recipe for baking, and don’t make the same mistake as me of using the same ingredients and method as for fried Sweet Ravioli because the result would be disappointing!
After several attempts, I finally found what I consider the perfect recipe for preparing BAKED SWEET RAVIOLI that has nothing to envy compared to the more caloric and heavy fried version.
To prepare these typical Carnival sweets, also called sweet Tortelli, no special cooking skills are required, the dough is easy to work with and very similar to shortcrust pastry.
Once the dough is rolled out with a rolling pin or pasta machine, simply fill the pastry and close it like a ravioli, seal the edges, and bake for a few minutes.
In a short time and with little effort, you’ll bake perfect, crumbly BAKED SWEET FILLED RAVIOLI that will delight both adults and children.
You can fill them with a filling of your choice, whether jam or spreadable cream, and if you want to use the same recipe simply to create Carnival Chiacchiere also to bake in the oven.
Perfect for a costume party, a delicious snack, or even as a dessert, these baked sweet ravioli will be the stars of this joyful festive period, and they can be prepared in advance and stored for several days in a tin box, maintaining their wonderful crispness.

Ingredients
- 2 1/4 cups all-purpose flour
- 7 tbsp butter (cold and in pieces)
- 1/2 cup granulated sugar
- 1 tsp baking powder
- orange zest (from 1 fruit)
- lemon zest (from 1 fruit)
- 2 eggs (whole)
- 1 egg yolk
- 1 pinch fine salt
- jam
- hazelnut cream (or pistachio)
- custard
- ricotta (and chocolate chips)
- powdered sugar

METHOD
Place the flour and the butter (cold) pieces in a bowl or stand mixer and start working it with your hands (or hook) to get a sandy mixture. Add: sugar, baking powder, vanilla essence, lemon, and orange zest, mix (or knead) quickly then also add the whole egg and the yolk. Work again until you get a more compact but still sandy mixture.
At this point, transfer to a lightly floured surface and knead the dough quickly by hand until it is smooth and homogeneous. Make a ball, wrap it in cling film, and let it rest in the fridge for 30 minutes. Take the dough back, work it slightly to make it soft and malleable, then roll it out with a rolling pin into a thin layer about 1/8 inch thick. Cut squares of about 1.5 inches per side with a pastry wheel.
Fill half of the squares with dollops of Hazelnut Cream and jam, leaving a little space at the edges, close the Sweet Tortelli with the free halves of the dough and close with your fingers the edges trying to eliminate the air inside.
Place the filled SWEET ravioli on a baking sheet covered with parchment paper and bake in a preheated ventilated oven at 356°F for about 10-12 minutes. They should become slightly golden. Take them out and let them cool then sprinkle with powdered sugar before serving.
STORAGE
The sweet filled ravioli, as they are baked and not fried, can be stored for several days in a tin box while still maintaining their crispness. You can therefore prepare them in advance to always have these delicious Carnival sweets ready at hand.
