  • 1/3 cup water (or plant-based milk or cow's milk)
  • 1 tsp honey (or maple syrup)
  • 1/2 cup 0% fat Greek yogurt
  • 1/3 cup yogurt (hazelnut flavored)

Steps

  • In a bowl, mix together oat flakes, honey, yogurt, and almond milk (or cow’s milk or another plant-based drink) until combined. Transfer the mixture into a single-serving bowl and refrigerate for at least 4 hours, preferably overnight.

  • After resting and before consuming, finish the preparation. Create a second layer on top of the porridge with the hazelnut yogurt and level with the back of a spoon.

  • Microwave the light hazelnut spread for a few seconds and then pour it over the hazelnut yogurt. Decorate as desired with toasted hazelnuts or crumbs. Refrigerate for a few minutes to set. Enjoy your breakfast!

NOTES

WATER To achieve a creamier porridge, you can replace water with an equivalent amount of cow’s milk or plant-based drink (soy, almond, oat, rice).

HONEY You can substitute honey with maple syrup or sweetener (for a light version) or even omit it.

VANILLA It’s amazing how a pinch of this essence can improve the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to blend and the oats to soften to achieve the perfect consistency.

HAZELNUT YOGURT: It’s easily found in supermarket aisles, but you can also prepare it at home by simply mixing 100g of 0% Greek yogurt with 15g of light hazelnut spread.

HAZELNUT SPREAD: For this recipe, I used light hazelnut spread, a version of the classic hazelnut cream with a light beige color. If you can’t find it or don’t like it, you can replace it with the classic hazelnut or pistachio cream.

STORAGE

The Double Hazelnut Porridge Overnight Oats can (and should) be prepared the night before for the next day. Once ready, it can be stored in the fridge in a closed container for up to 2 days.
