Ingredients for Puff Pastry Pockets with Spinach and Cheese

  • 1 sheet puff pastry (rectangular)
  • 3.53 oz spinach, cooked, boiled
  • 1.76 oz potato (cooked)
  • 1.76 oz fresh spreadable cheese
  • 1.76 oz provolone
  • 1 egg (small)
  • to taste sesame seeds

Preparation for Puff Pastry Pockets with Spinach and Cheese

  • For this recipe, I used leftover boiled spinach sautéed in a pan with oil and garlic and a small boiled potato.
    Place the spinach, potato, diced provolone, and fresh spreadable cheese in a bowl, then mix and combine everything well.

  • Unroll the puff pastry sheet, using a pizza cutter, cut nine squares.
    Fill each square with the spinach and cheese filling.
    Close the pockets by folding the four corners towards the center, sealing the edges well.

  • Place the pockets on a baking sheet lined with parchment paper, beat the egg, brush the surface of each pocket with the beaten egg, then sprinkle with sesame seeds and bake!

  • Bake the pockets for 10 minutes at 392°F then lower to 356°F and bake for another 10 minutes, bake for a total of about 20/25 minutes, adjusting based on your oven’s power. When the pastry is well-cooked and golden brown, turn off the oven and leave for another 5 minutes before removing.

  • Plate and serve the pockets piping hot, though they are also good rested and cold!
