Melon Crumble Steps
Let the butter soften at room temperature. In the stand mixer bowl, combine the sugar, egg yolks, and butter. Beat with the whisk until combined, add the flour, lemon zest, and salt. Mix with the paddle attachment until a homogeneous mixture is obtained, form a ball with your hands and let it rest in the fridge for 30 minutes. You can also do it all by hand following the same procedure
Cut the melon, remove the seeds, chop the pulp, with an immersion blender (if you are interested in buying click here) until a fine puree is obtained, sieve to release some liquid. Place in a bowl, add the starch and sugar, mix, the melon cream is ready
Retrieve the shortcrust from the fridge, spread slightly more than half in a 9.5-inch cake pan, greased with oil and floured. The shortcrust will be very crumbly, it will break, arrange it with your hands until it covers the entire pan, prick the bottom with a fork
Fill the cake with melon cream, level it. Then take the leftover dough and crumble it over the cream until it covers it completely. Leave in the fridge for a couple of hours, then bake in a preheated ventilated oven at 350°F for 50 minutes or until golden brown. Remove from the oven, let cool, remove from the pan, and dust with powdered sugar, enjoy
