I’ll tell you the truth, it was initially supposed to be an omelet, but I overdid it a bit with the amount of spinach! No worries though, because it turned out to be a fantastic, equally good alternative. Yes! I called it spinach, onion, and mushroom cake just to give you the idea of something tall and fluffy to make it seem like a cake.

Ingredients
- 1 red onion
- 5 eggs
- to taste salt
- 1 tablespoon grated parmesan cheese
- 3.5 oz fresh champignon mushrooms
- 18 oz blanched and drained spinach

To start, blanch the spinach and let it drain for a few minutes to remove excess liquid
Next, heat the oil in a 11-inch non-stick pan, then sauté the onion for a few minutes
Meanwhile, beat the eggs together with the salt and grated parmesan cheese and set aside
Then add the mushrooms to the pan, together with the onion, and let them flavor for a few minutes until the mushrooms are cooked. Add a pinch of salt as well
At this point, add the spinach to the pan and mix everything to evenly distribute all the ingredients
Then pour the eggs into the pan and let the liquid penetrate the spinach by creating spaces with a spoon or any other tool
Cook on low heat for about 15 minutes with the lid on. Make sure, however, that the surface of the cake is set before considering turning it
To complete, flip your cake with the help of a plate and cook for about 10 minutes on the other side. At this stage, you can slightly increase the heat and finish cooking without a lid
Finally, remove your cooked cake, again with the help of a plate, and plate it. Wait at least 10/15 minutes before serving
Advice!
Use only non-stick pans, otherwise you might have big problems when flipping. If you prefer, you can use smaller amounts of spinach or increase the number of eggs to get a more balanced result, thus more similar to an omelet.
