Spinach, Onion, and Mushroom Cake

I’ll tell you the truth, it was initially supposed to be an omelet, but I overdid it a bit with the amount of spinach! No worries though, because it turned out to be a fantastic, equally good alternative. Yes! I called it spinach, onion, and mushroom cake just to give you the idea of something tall and fluffy to make it seem like a cake.

Ingredients

  • 1 red onion
  • 5 eggs
  • to taste salt
  • 1 tablespoon grated parmesan cheese
  • 3.5 oz fresh champignon mushrooms
  • 18 oz blanched and drained spinach

Steps

You’ll find this recipe to make the spinach, onion, and mushroom cake very simple

  • To start, blanch the spinach and let it drain for a few minutes to remove excess liquid

  • Next, heat the oil in a 11-inch non-stick pan, then sauté the onion for a few minutes

  • Meanwhile, beat the eggs together with the salt and grated parmesan cheese and set aside

  • Then add the mushrooms to the pan, together with the onion, and let them flavor for a few minutes until the mushrooms are cooked. Add a pinch of salt as well

  • At this point, add the spinach to the pan and mix everything to evenly distribute all the ingredients

  • Then pour the eggs into the pan and let the liquid penetrate the spinach by creating spaces with a spoon or any other tool

  • Cook on low heat for about 15 minutes with the lid on. Make sure, however, that the surface of the cake is set before considering turning it

  • To complete, flip your cake with the help of a plate and cook for about 10 minutes on the other side. At this stage, you can slightly increase the heat and finish cooking without a lid

  • Finally, remove your cooked cake, again with the help of a plate, and plate it. Wait at least 10/15 minutes before serving

Advice!

Use only non-stick pans, otherwise you might have big problems when flipping. If you prefer, you can use smaller amounts of spinach or increase the number of eggs to get a more balanced result, thus more similar to an omelet.
