Preparation for Puff Pastry Hearts with Mascarpone Cream

  • Unroll the puff pastry, and with the large heart cutter, cut out about 18 hearts.
With the smaller heart cutter, cut out 12 borders for our vol-au-vents. For each vol-au-vent, you will need a whole base plus two cutout shapes, so remove the central part and leave only the border.

  • Place 6 large whole hearts on a baking tray lined with parchment paper, brush the edges with beaten egg, place the first border on top, brush again, and then place the last and second border on top, continue like this with the other hearts, brush the last layer as well and sprinkle the edges with the crumbs.

  • Also place the small hearts cut from the border, gather and roll out the leftover dough and make simple hearts, brush these as well and then sprinkle with the crumbs.

  • Bake the puff pastry hearts in a preheated fan oven at 392°F for the first 5 minutes, then lower the temperature to 356°F and continue baking for another 10 minutes or so. When they are well browned, turn off the oven and let cool.

  • In the meantime, prepare the mascarpone and Nutella cream.
In a bowl, pour the mascarpone, powdered sugar, and an abundant tablespoon of hazelnut cream or Nutella, mix and combine everything well.
Then fill a piping bag with a large star tip.
