We’ve learned by now that breakfast is the most important meal of the day because it gives us the right energy and strength to face various tasks effectively.
Today I present this recipe for a Breakfast of Oat Flakes, Milk, and Greek Yogurt, a sort of Porridge that is prepared in no time, rich in energy and taste, the OVERNIGHT OATS PORRIDGE with SNICKERS flavor, the famous bars with peanuts, caramel and a tasty milk chocolate coating.
A nice cup of this Anglo-Saxon dessert and we will be ready to face the challenges of the day whether at the office, at school, at home for housework or, for those who can afford it, as tourists in villages and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that does not require cooking, perfect for those with little time or who don’t feel like cooking. It is prepared in advance, usually the night before, left in the fridge overnight, and ready to be enjoyed with the topping of your choice upon waking.
An easy recipe: the oat flakes are mixed with milk or water, Greek yogurt, flavored as desired with vanilla, and sweetened with honey. Once the mixture is combined, there is no need to cook it, just let it rest in the fridge for at least 4 hours, preferably overnight.
You can also watch the video within the recipe to follow each step, although I assure you it is really easy, and I am sure you won’t need it.
Once ready, you just have to choose whether to layer it or not with your favorite flavored yogurt, spreads, and garnish it with the Topping of your choice because there are endless delicious possibilities.
In today’s recipe of OVERNIGHT OATS with SNICKERS flavor, I created a first layer with the Porridge, a second made of 0% fat Greek yogurt mixed with caramel (you can buy caramel-flavored yogurt directly), added a layer of caramel, and decorated with milk chocolate and toasted peanuts.
You will see how this simple breakfast will satiate you, without making you feel too heavy, for a long time and you will reach lunch without that annoying feeling of hunger.

Ingredients

  • 1/2 cup oat flakes
  • 3.4 oz water (or plant-based milk or cow's milk)
  • 1 teaspoon honey
  • 4.41 oz 0% fat Greek yogurt
  • 2.47 oz 0% fat Greek yogurt (or caramel-flavored)
  • 2 tablespoons caramel
  • 1.06 oz milk chocolate
  • 1 teaspoon coconut oil
  • salted roasted peanuts (for decoration)

Steps

As I mentioned earlier, you can choose to make or buy the Salted Caramel. For the ingredients and recipe for Salted Caramel, see the notes at the bottom.

  • In a bowl, mix together oat flakes, honey, yogurt, and almond milk (or cow’s or other plant-based milk) until combined. Transfer the mixture into a single-serving cup and refrigerate for at least 4 hours, ideally overnight. 

  • After resting and before consuming, finish the preparation. Prepare the caramel (you’ll find the procedure in the notes at the bottom), add 2 tablespoons to the yogurt, then mix until combined. Pour it over the oat layer and level with the back of a spoon.

  • Melt 1.06 oz of milk chocolate in the microwave with 1 teaspoon of coconut oil and decorate the caramel yogurt layer randomly, finish with some toasted peanuts and let it solidify in the fridge for a couple of minutes: it will remind you of the taste of the famous Snickers bar with caramel, chocolate and peanuts.  

NOTES

WATER For an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based drink (soy, almond, oat, rice).

HONEY You can replace honey with maple syrup or sweetener for a lighter version.

SALTED CARAMEL: If you don’t have time or desire to prepare it, you can buy Caramel flavored Yogurt found on supermarket shelves or replace it with a Caramel flavored protein dessert/cream. As for the Salted Caramel Topping, if you can’t find it ready-made, you can omit it or replace it with spreads.

VANILLA It’s amazing how a pinch of this essence can enhance the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to merge and the oats to soften to the perfect consistency.

Preparation of Salted Caramel

Pour 4.76 oz of sugar into a small pan with a thick bottom and cook over medium-low heat until the sugar starts to melt. Rotate the pan often to prevent the sugar from burning on the edges. Meanwhile, heat 3.38 oz of fresh liquid cream. Once the sugar is completely melted and has an amber color, lower the heat and add 2.29 oz of butter and a pinch of salt.

Quickly mix with a whisk until the butter is completely melted, then pour in the hot cream as well. Mix with a whisk until smooth, then transfer it to a jar and let it cool first at room temperature and then in the fridge.

STORAGE

The SNICKERS flavored OVERNIGHT OATS can be prepared the night before for the next day, in fact, it will be even better. Once ready, it can be stored in the fridge in a sealed container for up to 2 days.

  • How can I get the right consistency for Oat Flakes?

    To achieve the perfect consistency for oats, it’s all about the oat/liquid ratio. Generally, a 1:2 ratio works well. If the oats are too thick, add a little more liquid, if too liquid, slightly reduce the amount of milk/water next time.

  • How can I balance the sweetness when adding fruit and toppings to the Oat Flakes?

    Overnight Oats Flakes can be too sweet with some combinations (such as with hazelnut or pistachio cream). Keep this in mind when deciding how to layer it and possibly taste a spoonful before adding extra sweeteners like honey or maple syrup.

  • Can I heat my Overnight Oats Porridge, or should it be eaten cold?
