Green Peppers in Air Fryer: lighter than you expect!
The fried green peppers (also known as Friggitelli) immediately take me back to Southern summers, the intense aromas of home cooking, and those simple dishes that taste of tradition.

But today I want to propose a lighter and more modern version: green peppers in the air fryer. I often prepare them when I want something tasty but light, and every time they disappear in a flash!
Thanks to the air fryer, I can achieve the same crispy and golden effect of frying, but with very little oil. I season them with a drizzle of extra virgin olive oil, a pinch of salt, and add cherry tomatoes for an extra touch.
They are ideal as a side dish, but also as a snack to serve with toasted bread or a fresella.

- 3 tbsp extra virgin olive oil
- 5.29 oz cherry tomatoes (cherry or datterini)

Steps to Prepare Green Peppers in Air Fryer Quickly
Rinse the green peppers and cherry tomatoes well. In this recipe, we will not cut the peppers, so we will prepare them whole, with the stem. If the stem is large, shorten it with scissors.
In a large plate or bowl, place the peppers and cherry tomatoes cut in half. Season them with two tablespoons of oil and salt, and mix well with a spoon.
Place parchment paper in the air fryer basket and pour in the seasoned peppers and tomatoes.Cook at 392°F for 12 minutes, turning them halfway through cooking. It will be sufficient to have the peppers roasted on the outside and cooked and flavorful on the inside.
Place everything on a serving plate and dress with a tablespoon of raw oil and a few slices of basil. They will be delicious!

Can I store cooked green peppers?
Yes, once cooked and completely cooled, you can store them in the refrigerator for 2-3 days in an airtight container. I recommend reheating them in the air fryer for a couple of minutes before serving: they will become crispy and fragrant as freshly made!
Is it possible to vacuum seal them?
Absolutely yes! If you want to prepare a larger quantity, you can store the already cooked peppers vacuum sealed, even in single portions. They last up to 7 days in the refrigerator, or you can freeze them and keep them for about 2 months. This way you’ll always have a ready and genuine side dish at hand, perfect for your kitchen organization.
What kind of peppers should I use?
For this recipe, I recommend sweet green peppers, long and thin, typical of Southern Italy, also called friggitelli. They have tender flesh and a delicate flavor, ideal for cooking in the air fryer.
