Ingredients
- 14 oz zucchini
- 11 oz orzo
- 1 onion (small)
- 2 tablespoons spreadable cheese
- to taste extra virgin olive oil
- to taste black pepper (optional)
- to taste grated parmesan

Steps
Preparing the orzo soup with zucchini and fresh cheese is really easy and quick.
First, peel, wash, and thinly slice a small onion.
Wash, trim, and chop the zucchini into chunks, then place them in the pot along with the onion. Cover with water, add a drizzle of oil, salt, cover with a lid, and cook for 15-20 minutes.
When the zucchini are soft, blend everything with the immersion blender.
If necessary, add a little more water and bring it to a boil before adding the orzo to the pot.
Cook the pasta, stirring occasionally and adding a little hot water if needed. When the pasta is ready, turn off the heat, adjust the salt, and add the ground black pepper (avoid if there are small children).
At this point, add the fresh cheese of your choice (robiola, ricotta, Philadelphia, or simple cheese spread) and stir to melt it and add creaminess to the dish.
Now plate and finish the preparation with a drizzle of raw oil and a bit of grated cheese 😉.
