When you find yourself on the streets of the Sicilian capital, you can’t miss “i cazzilli,” which are fried potato crocchè. You only need a few ingredients to prepare the Palermo Crocchè in Air Fryer
- 1 lbs potatoes
- to taste salt
- to taste fresh chopped parsley

Steps
To make Palermo crocchè, you won’t have to make much effort at all! Very few steps are needed, let’s take a look at them together.
To start, peel the potatoes and then rinse them under running water
Next, cut the potatoes into coarse pieces and steam them for at least 30 minutes
Once cooking is complete, put the potatoes in a food mill and then mash them completely. Naturally, you can also use a potato masher
At this point, add the salt and fresh chopped parsley, then mix the whole mixture and place it in the fridge, after cooling, for a few hours
Then take the mixture out of the fridge and shape the crocchè by hand into an oval and elongated shape
As a final step, grease the crocchè with some oil before proceeding to the final cooking stage
Finally, place your crocchè in the air fryer basket and cook at 356°F for 15 minutes, taking care to check the degree of cooking often. If necessary, turn the crocchè halfway through cooking
Lastly, remove the well-cooked crocchè and sprinkle with salt and lemon juice. If you prefer, you can sprinkle with some pepper and finally enjoy them while still hot
Tip!
You can add pepper to the mixture if you prefer a bolder and spicier flavor. You can also fry them in hot oil to replicate the traditional crocchè. They are also great in a sandwich.
