We’ve learned it by now, breakfast is the most important meal of the day because it gives us the right energy and strength to face the various tasks.
Today I present this recipe for an Oat Flakes, Milk, and Greek Yogurt Breakfast, a kind of Porridge that is prepared in no time, rich in energy and taste: BLUEBERRY OVERNIGHT OATS.
A good cup of this dessert of Anglo-Saxon origins and we’ll be ready to face the day’s challenges, whether in the office, at school, at home for household chores, or, for those who can afford it, to be tourists around towns and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that doesn’t require cooking, perfect for those who have little time or don’t feel like cooking. It is prepared in advance, usually the night before, left in the fridge for a night, and upon waking, it’s ready to be enjoyed with the topping of your choice.
An extremely easy recipe: oat flakes are mixed with milk or water, Greek yogurt, flavored as desired with vanilla, and sweetened with honey. Once the mixture is combined, there’s no need to cook it, just place it in the fridge to rest for at least 4 hours, preferably overnight.

Once ready, all you have to do is choose whether to layer it or not with your favorite yogurt, spreadable creams, and garnish it with the topping of your choice because there are endless delicious possibilities.
In today’s recipe, I created a first layer with the Porridge, a second of Blueberry Jam, a third layer of 0% fat Greek Yogurt Blueberry, and I simply finished by adding a few blueberries and a mint leaf, because often the simplest things are the best.
You’ll see how this uncooked Porridge cup will satisfy you without making you feel too heavy, for a long time, and you’ll reach lunch without that annoying sense of hunger.

Ingredients

  • 3/4 cup oat flakes
  • 1/2 cup water (or vegetable milk or cow's milk)
  • 1 tsp honey (or maple syrup)
  • 4.2 oz Greek yogurt 0% fat
  • 2 tbsp blueberry jam
  • 1.8 oz blueberry Greek yogurt
  • blueberries
  • A few leaves mint

Steps

  • In a bowl, mix together oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based drinks) until combined. Transfer the mixture into a single-serving cup and place it in the fridge for at least 4 hours, preferably overnight.  

  • After the rest time and before consuming it, finish the preparation. Pour the Blueberry Jam over the Oat Flakes layer and spread it evenly. Create a third layer with the blueberry yogurt and level it with the back of a spoon.

  • You can enjoy your uncooked Porridge just this way by adding only a few fresh blueberries and a mint leaf on top, but if you want to make it super indulgent, melt 1 oz of milk chocolate in the microwave with 1 tsp of coconut oil and spread it evenly over the blueberry yogurt layer. Put it in the fridge to solidify for a few minutes. Decorate as desired with fresh blueberries and a mint leaf.

NOTES

WATER For an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based drinks (soy, almond, oat, rice).

HONEY You can replace honey with maple syrup or sweetener for a lighter version.

BLUEBERRIES: If you don’t particularly like their taste, you can replace them with any other type of fruit: blackberries, raspberries, strawberries, or other fruits.

VANILLA A pinch of this essence can improve the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to blend and the oats to soften to the perfect consistency.

STORAGE

The OVERNIGHT OATS PORRIDGE with BLUEBERRIES can be prepared the night before for the next day, and it will be even better. Once ready, it can be stored in the fridge in a closed container for up to 2 days.
