Cupcake with blueberry frosting, a classic American treat, but delicious.
I prepared the blueberry cupcake, and then decorated it with blueberry frosting. I also recommend trying this fantastic blueberry cake (Blueberry cake).
The cupcakes with blueberry frosting are delicious and beautiful, with a fantastic purple color that lifts your mood just by looking at them. They are single-portion treats, literally “cake in a cup”, they are soft and flat, baked in the oven and then filled with frosting, creams, or glazes based on mascarpone, cheese, or butter.
They can be decorated with fresh or dried fruit, chocolate, sprinkles, confetti. Quite simple to make, the secret to having soft bases that do not puff up is to use ingredients and butter at room temperature, unlike the frosting which must be cold.
This is a version with blueberries, but you can fill them as you like, the base remains unchanged. Perfect for all occasions, from breakfast to snack or a special dessert

Steps to make cupcakes with blueberry frosting
First, whip the softened butter with the sugar, grated lemon zest, and vanilla extract, for about 5 minutes. Add the egg, and the milk, whip everything together until you get a fluffy mixture
Add the sifted flour and baking powder to the mixture, whip for a few seconds until you get a thick and compact batter. Mix in the blueberries that have been previously washed and dried, leaving a few aside for decoration
Place the baking cups in the muffin pan and add 1 tablespoon of batter. Bake in a preheated static oven for about 20 minutes at 350°F, if you see them browning, lower to 340°F without opening the oven. Then take them out and let them cool outside the pan
Start by placing the gelatin sheet (if you want to purchase it click here) in cold water to soak. Prepare the blueberry sauce in a saucepan by adding the blueberries, sugar, and lemon juice. Cook for about 15/20 minutes, add the gelatin sheet, mix. Strain the sauce
Whip the mascarpone and cold cream together in a bowl, add the powdered sugar and continue to whip until you get a soft and thick cream. At this point, fold in the blueberry sauce with a spatula, using gentle movements from the bottom up, mix well
Finally, fill a piping bag with a star nozzle and make decorations starting from the center of the cupcake to form a spiral. Decorate with the remaining blueberries
