Ingredients for Pumpkin Slices Rolled with Cheese and Speck
- 13 slices yellow pumpkin
- 6 tbsps fresh spreadable cheese
- to taste speck (strips)
- to taste salt
- to taste extra virgin olive oil
- 1 sprig rosemary
- to taste breadcrumbs

Preparation for Pumpkin Slices Rolled with Cheese and Speck
Get a large, long pumpkin, remove the seeds from the inside, and then cut the slices all of the same thickness. They should be thin enough to roll.
Take a muffin tin, brush the inside with oil, then sprinkle with breadcrumbs. Insert the pumpkin slices rolled into each other. If they are long enough, two are sufficient.
Hold the slices with a wooden toothpick, place a small piece of pumpkin at the base, then sprinkle with salt, a drizzle of oil, and breadcrumbs, and transfer the tin to the oven.
Bake the rolled pumpkin slices in a preheated oven at 356°F for about 15 minutes. When they are cooked and golden, remove them, gently place them on a serving plate, and fill them.
Fill the slices with a spoonful of creamy fresh cheese, speck strips, and a few rosemary needles.
Bake again for about 5 more minutes at 356°F.
Remove, add sprigs of fresh rosemary, and serve.
Tips and Variations
For the filling, use the cheese you prefer: gorgonzola, taleggio, or others.
You can use the slices with or without the skin; I preferred to leave it on.
