Broccoli flan with toasted almonds, spring is approaching, and I start craving for light, colorful, fragrant things. This applies not only to outfits but also to food: fresh, fun, frivolous recipes.
If you’re tired of long cooking, super sauced pasta, spicy foods, I suggest the flan. It never disappoints, soft on the palate, good-looking, and depending on the herbs used, fresh in flavor.
Everyone likes it, it’s quickly prepared, and not heavy. In this case, I used broccoli, ricotta, and almonds, definitely very healthy, and a fantastic combination, but you can get creative, don’t be shy, experiment.

Ingredients
- 9 oz ricotta
- 2 cups broccoli (if using frozen, 7 oz is enough)
- 2.8 oz Grana Padano DOP
- 1.8 oz almonds
- to taste salt
- to taste black pepper
- 1 tsp curry (in powder)
- 3.5 oz broccoli (cleaned)
- 0.4 cup vegetable broth
- 0.18 oz rice flour
- to taste salt
- to taste black pepper (ground)
- 0.5 oz olive oil

Steps
Preparation of the flan
Clean and wash the broccoli, then blanch them for about 15 minutes. Naturally, we will keep only the florets
Once ready, in a pan (if you are interested in buying, click here) heat the oil and cook the broccoli for a few minutes. Add a pinch of salt and pepper. Set aside 3.5 oz and blend the rest with an immersion blender
Toast the almonds in the oven at 212°F for a few minutes, then chop them
In a bowl, cream the ricotta with the curry, first with a spoon, then with a whisk
Combine the grated Grana Padano, chopped broccoli, salt, pepper, and chopped almonds
Distribute the mixture in greased molds, you can also use disposable ones, bake at 302°F for 15 minutes. And here are our flans ready
Blend the reserved broccoli with salt, pepper, oil, rice flour, all diluted with vegetable broth. Serve the flans, using this sauce as decoration, along with some broccoli florets
