It’s an easy recipe accessible to everyone, aside from the cooking time of the farro which takes a bit, it’s also a quick recipe, I sped up the process by using a pressure cooker, as the vegetables take only a few minutes to cook.

Ingredients for Farro Salad with Sautéed Vegetables
- 1 1/4 cups farro
- 2 zucchini (medium)
- 1 bell pepper (yellow)
- Half onion
- 4 tomatoes
- to taste olive oil
- to taste salt
- to taste basil

Preparation for Farro Salad with Sautéed Vegetables
Rinse the farro and cook it covered with water and a pinch of salt in the pressure cooker for about 10 minutes, after the first whistle. Release the steam, drain, and set aside.
If you don’t have a pressure cooker, use a regular pot and cook with plenty of water for the minutes described on the package, then drain.
Chop the onion and sauté in a pan with a bit of olive oil, add the vegetables cut into small pieces, some salt, sauté for a few minutes then add a splash of water and continue cooking, stirring occasionally for about 8-10 minutes.
The vegetables should not be overcooked.
Add the cooked farro to the pan with the vegetables, stir and mix well, if needed add a bit of olive oil, fresh basil leaves and serve the farro warm or cold.
