Baked tortellini with zucchini and bacon is a quick and tasty dish, a combination of flavors, colors, and tastes to bring a very appetizing dish to the table.
I’ve always cooked tortellini during the winter and always in broth, but recently I’ve made several quick recipes with oven cooking and different toppings, I must say they are much appreciated by even the little one.
This dish is quite spring-like with the first tender zucchinis that I harvested from my dad’s garden, along with smoked bacon, scamorza, and cheese to add a touch of flavor to this dish, perfect even as a Sunday meal!

Ingredients for Baked Tortellini with Zucchini and Bacon
- 10.5 oz Tortellini (fresh, meat-filled)
- 2 Zucchini (small)
- 2.8 oz Smoked Bacon (cubed)
- 1.8 oz Grana Padano PDO (grated)
- 1.8 oz Smoked Scamorza
- 1.8 oz Fresh Spreadable Cheese
- 1 Spring Onion (fresh)
- 3 tablespoons White Wine

Preparation for Baked Tortellini with Zucchini and Bacon
Clean the zucchinis, cut off the ends, wash them, and cut them into small pieces; slice the spring onion into rounds and sauté it in a pan along with the zucchini and bacon.
Cook over medium heat for about 2 minutes, then pour in 3 tablespoons of white wine, stir and let it evaporate.
Add a little water, some salt, and cook for about 8-10 minutes.Drain the tortellini, reserving a few ladlefuls of the cooking water, and add them to the pan with the zucchini and bacon. Mix well, then add some creamy cheese, the Grana, and pieces of scamorza, leaving a few tablespoons aside.
Mix and blend everything well with a ladleful of water, pour into a baking dish, and sprinkle with some more Grana and a bit of grated scamorza.
Bake the tortellini in a preheated oven at 350°F for about 10 minutes. At the end of cooking, pour in a few tablespoons of creamy cheese with a bit of hot cooking water, let it cook for another minute.
Once done, take out of the oven and serve the tortellini with fresh basil leaves.
