The oven-baked stuffed green radicchio is a very tasty and flavorful vegetarian side dish, with simple slightly bitter leaves stuffed and coated with a few ingredients that make this vegetable very crunchy and appetizing.
The recipe is very simple: just sprinkle the leaves both inside and out with a mix of flavored breadcrumbs, pine nuts, provolone cheese, and a drizzle of oil, then bake in the oven.

- 1 head Radicchio (green)
- 1.75 oz Soft Breadcrumbs
- 1.75 oz Provolone Cheese
- 2 tbsp Pine Nuts
- as needed Olive Oil

- 2 tbsp Breadcrumbs
- 2 tbsp Grana Padano PDO (grated)

Preparation for the oven-baked stuffed green radicchio
Wash the head of radicchio well, open the leaves, and fill with a soft breadcrumb mixture made with blended bread, grated Grana cheese, salt, oil, garlic, parsley, and capers.
Also add pieces of provolone and pine nuts.Place the radicchio on a baking tray, drizzle with a little olive oil, and sprinkle with dry breadcrumbs mixed with grated Grana cheese, distribute some more pine nuts and pieces of provolone, salt, and transfer the tray to the oven.
Bake the stuffed green radicchio in a preheated oven at 356°F for about 20-25 minutes, adjusting to your oven’s power, bake until a nice golden crust forms.
