GRAPE CAKE
Cake and Grape – two words that together are magical! Because there’s nothing better for me than a soft and fluffy cake that, when bitten, encloses sweet grape berries.
A truly easy and super fast recipe that not only requires no cooking skills but you can even make it with just a bowl and a spoon, without an electric mixer or a stand mixer.
And it’s without butter or oil so light and low in calories. You only need a few simple ingredients such as flour, baking powder, ricotta, eggs, sugar, and of course, GRAPES!
The Grape Cake is perfect for the autumn period when Grapes are at their peak season with sweet and fleshy berries.
A pantry dessert, as my grandmother used to say, meaning that when you make it, it tastes of home and good things, a great reason to get up in the morning without a frown because at least you have a beautiful Grape Cake waiting for you.

Ingredients
- 9 oz ricotta
- 3/4 cup sugar
- 2 eggs (whole)
- 1/4 cup milk
- 2 cups all-purpose flour
- 1/3 cup potato starch
- 1 packet baking powder
- 10.5 oz grapes (white or red)
- sugar pearls (for decoration)

Steps
First, prepare the ingredients: wash the grapes, cut the berries in half, and remove seeds if present. Divide them into two equal parts by weight. Sift together the flour, starch, and baking powder.
Place the ricotta, milk, and sugar into a large bowl, mix, add the whole eggs, and mix again using a spoon until you get a smooth, lump-free mixture. Add the sifted flours with the baking powder and blend everything together. The batter may seem not very liquid and very firm, but it is normal.
Add to the batter half of the previously cut grapes and mix with a spoon. Transfer the mixture to a previously buttered and floured pan and level the surface with a spatula or a spoon. Decorate with the other half of the grape berries and the sugar pearls.
Bake the Grape Cake in a static oven at 350 degrees Fahrenheit for about 45 minutes. Before removing it from the oven, do the toothpick test, and if necessary, continue baking for a few more minutes. When it’s done, remove it from the oven and let it cool completely before removing it from the mold.
NOTES
POTATO STARCH: If you don’t have Potato Starch at home, you can easily use only all-purpose flour. In this case, you will need 10.5 oz.
GRAPES: You can use any table grapes, either white or black, or both, as long as the total weight is 10.5 oz.
BATTER CONSISTENCY: The batter is intentionally very firm, allowing the grape berries to be well distributed throughout the cake without sinking to the bottom.
STORAGE
Once ready, the Grape Cake should be stored at room temperature, in a cake container or an airtight container for up to 2 days. If you want to extend the shelf life, keep it in the refrigerator.
