The croquettes with dried fava bean puree are a tasty and flavorful appetizer made with leftover fava bean puree, a typical southern dish.
The croquettes turn out beautifully golden and slightly crispy on the outside. They are also light due to the baking method but flavorful enough for their taste and the soft heart of melting provola cheese.
In this way, the dried fava bean croquettes will have a truly delicious flavor that even picky eaters will enjoy. Children will also like them, and they can be served as a light main course.

Preparation Steps for the Croquettes with Dried Fava Bean Puree
For preparing the dried fava bean puree croquettes, I used leftover dried fava bean puree, a typical creamy first course from the south.
So to the leftover, add the egg, salt, grated Grana Padano, and breadcrumbs.Mix and combine all the ingredients well. If the mixture is too soft, add more breadcrumbs.
Now prepare and shape the croquettes: take a piece of the mixture, spread it with your hands, and then stuff it in the center with a piece of provola cheese.Roll and shape them with your hands, then roll them in a seasoned breadcrumb mix and proceed to cooking.
Place the croquettes on a non-stick baking tray, drizzle with some oil, and then bake.COOKING
Bake the croquettes in a preheated oven at 356°F for about 15 minutes, turning during cooking for an even golden color. Remove from the oven and serve hot.
If you prefer, you can also fry the croquettes in hot oil in a pan.

Can I use mashed potatoes instead?
Yes, of course, using the same method but with a different consistency due to the breadcrumbs, you can use mashed potatoes!
