Preparation of Black and White Button Cookies
In the bowl of the stand mixer or in a bowl by hand, work the butter, at room temperature and in pieces, with the sugar until it forms a cream, then quickly continue working and add the eggs, and the grated zest.
Finally, add the sifted flour with baking powder, leaving aside 50 grams, quickly mix everything and then divide the dough into two portions.
In the white portion add the remaining flour, in the other portion continue working in the unsweetened cocoaWrap the doughs with cling film and let them rest for about 30 minutes in the fridge.
After this time, roll out each shortcrust pastry to a thickness of about 1/4 inch. With the help of a pastry cutter or other round shapes make many small circles.Score them with another smaller pastry cutter and then with the tip of a nozzle or a straw make four small holes to create the button effect. Place the button cookies on a baking tray lined with parchment paper.
Bake the cookies in a preheated ventilated oven at 350°F for about 12-15 minutes, adjust according to the power of your oven if you need to remove earlier, the cookies should be just golden, then take them out and let them cool.
