STUFFED PEACHES MY WAY

Stuffed peaches my way are a classic of Italian cuisine, an ancient dessert.

Even in my region, Piacenza, it was a typical dessert to present at the end of a meal. It is reported in traditional Piacenza recipes, and was part of the list of desserts by Giuseppe Verdi’s cook.

Stuffed peaches are really delicious. We are talking about a quintessential summer recipe. In this case, I made some variations from tradition, where the filling is made with peach pulp, amaretti, cocoa, liqueur, and sugar. In fact, instead of cocoa, I used white chocolate, which makes it a little sweeter and more delicious.

My grandfather loved it, so my grandmother always prepared it for him for Sunday lunch. But he was so greedy that sometimes they disappeared before the said lunch time….

Steps for Stuffed Peaches My Way

  • Wash the peaches, cut them in half without peeling. Remove the pit and scoop them out a bit using a fruit scooper. Place the peach pulp on a small plate and mash it with a fork.

  • Crush the amaretti with a meat tenderizer, and mix them with the peach pulp, the liqueur, and the chocolate cut into small pieces, practically chopped, and a little sugar.

  • Place the peaches in a baking dish lined with parchment paper. Fill them with the prepared mixture. Bake at 356°F for about 20 minutes, until a slight crust forms. Let cool and sprinkle the peaches with some crushed amaretti, serve.
