Apple Fritters with Dried Fruits and Chocolate

The apple fritters with dried fruits and dark chocolate scented with orange, are delicious sweet balls, very quick to make, they are so good that one leads to another and they’re gone quickly!

A very simple recipe that is prepared in a few minutes, just mix all the ingredients and then fry in hot oil, the batter does not need to rise because I used instant baking powder.

They are so delicious that you can eat them one after another or accompany them with a coffee, a tea and why not ….since today is St. Martin’s Day, even with a good glass of liqueur wine!

Ingredients for Apple Fritters with Dried Fruits and Chocolate

  • 1 Apple
  • 1/2 Lemon juice
  • 1/4 cup Brown sugar
  • 1 Orange zest (grated)
  • 1 tbsp Pine nuts
  • 1 tbsp Cranberries (dried)
  • 1/4 cup Milk
  • 3 tbsp Corn oil
  • 2 Eggs (large)
  • 1 1/2 cups Rimacinata semolina flour
  • 1 tsp Baking powder
  • as needed Peanut oil
  • as needed Powdered sugar

Preparation of Apple Fritters with Dried Fruits and Chocolate

  • Peel the apple, cut it into small cubes, place it in a bowl, pour the lemon juice over it to prevent browning, then add the sugar and mix well.
    Add the grated orange zest or if you prefer, use lemon zest.

  • Add the eggs, milk, and oil to the batter, beat well with a fork, then add the chopped dried cranberries, pine nuts, and chocolate chips, mix everything well again.

  • Finally, gradually add the flour, I used rimacinata semolina because I ran out of all-purpose flour, constantly stirring add a teaspoon of baking powder.
    It should result in a good thick and soft batter.

  • Take a saucepan with high sides, or a small frying pan, pour plenty of seed oil and bring to a temperature of about 340°F.
    When you notice the oil is hot but not too hot, start frying.

  • With the help of two teaspoons, drop the batter into the hot oil, the fritters should slowly brown, they need time to cook inside, be sure to keep the flame low, turn them well during cooking, and when they are nicely browned, drain them on paper towels.

  • If the oil gets dirty between frying, gently clean the surface with a strainer to remove residue and proceed. Do not make large spoonfuls as they increase slightly in volume during cooking, better small and well cooked inside.
    At the end of cooking, transfer the fritters to a serving plate and sprinkle with powdered sugar.

You can vary the ingredients for the preparation of the fritters, you can remove, add, and substitute some ingredients like the apple with a pear or the cranberries with raisins, or rum instead of lemon juice.
