Ingredients
- 1 1/4 cups rice
- 5.29 oz bresaola
- 1.76 oz Grana Padano DOP
- 2.82 oz arugula
- to taste extra virgin olive oil
- to taste lemon juice
- to taste salt
How to Make Rice Salad with Bresaola
Cook the rice in plenty of salted water, then drain it and spread it in a baking dish, spreading it out to cool.
Slice the bresaola and place it in a bowl along with the arugula. Add the cold rice and the shaved Grana Padano.
Prepare a citronette to dress the pasta. In a glass or small bowl, pour 4 tablespoons of olive oil, the juice of one lemon, and a pinch of salt, then start emulsifying everything. Then add the dressing to the rice.
Serve the salad immediately or let it rest for 30 minutes in the refrigerator to better appreciate the flavors.
Storage and Tips for Rice Salad with Bresaola
Store it in an airtight container in the refrigerator. Instead of the citronette, you can add a couple of tablespoons of mayonnaise along with some toasted nuts, like pine nuts or almonds.
