Baked Pumpkin and Potato Slices with Onion are a truly delicious side dish, featuring many slices of pumpkin, potatoes, and onions flavored with fennel seeds, arranged on a baking sheet for golden and crispy cooking.
The preparation involves cutting the selected vegetables properly: pumpkin and onion into thick slices because they cook faster and potatoes into thinner slices.
The cooking takes about half an hour, but being in the oven, you can prepare other dishes in the meantime and occasionally check to ensure they do not over-brown.
It’s a simple and quick side dish, and you can pair pumpkin and potatoes with a meat second course or a cheese and cold cuts platter.
