Potatoes with mushrooms, bacon, and Stilton is a simple dish, yet rich in flavor and aroma. Steps

To prepare the potatoes with mushrooms, bacon, and Stilton…

  • First, wash the potatoes under cold running water to remove any soil residues, and place them in a pot filled with cold water (it should cover the potatoes’ surface well).

  • Bring the water to a boil and cook the potatoes for about 20/30 minutes from when it starts to boil again. Check their doneness by piercing them with a toothpick or fork tines.

  • While the potatoes are cooking, peel and slice the onion thinly, then clean and slice the champignon mushrooms. Remove the end of the stem and use a damp dish towel to remove the soil.

  • Take a pan, pour in the extra virgin olive oil, heat it, then add the onion and let it brown. Next, add the mushrooms, a few tablespoons of water, and cover everything with a lid. Cook for 10 minutes until the mushrooms are soft.

  • Remove the lid, let the water formed during the mushrooms’ cooking evaporate, and when they are dry, turn off the stove.

  • Check the potatoes’ doneness as well. If they pierce easily without breaking apart, you can remove them from the heat. Drain them and let them cool slightly, then cut the skin with a knife and peel them. Alternatively, you can leave the skin on.

  • Cut the potatoes into not-too-small pieces and place them in a bowl, adding the onion with the mushrooms, the bacon cut into cubes or strips, and the Stilton cheese cut into cubes. Salt, pepper, and mix.

  • Transfer everything to a lightly greased or non-stick baking dish and bake in a preheated oven at 356°F. Cook for 10 minutes in fan mode. Serve the potatoes with mushrooms, bacon, and Stilton hot and as you prefer.

Variations

You can replace the English Stilton cheese with spicy Gorgonzola.
