Ingredients for Baked Breaded Pumpkin
- 1.2 lbs pumpkin (weighed already peeled)
- 2 eggs
- 1 cup breadcrumbs
- 4 tbsps extra virgin olive oil
- 1 g salt

Preparation of Baked Breaded Pumpkin
Clean the pumpkin of its skin, wash and dry it well, slice it into pieces about 0.4 inches thick (thicker is fine too, as it cooks quickly).
In a bowl, beat the eggs with a pinch of salt and prepare the breadcrumbs, mixing with a pinch of salt as well. You can put the breadcrumbs on parchment paper, so when you’re done, you can just throw it away and not wash anything).
Dip the pumpkin slices first in the egg, then in the breadcrumbs, and place them on a baking sheet with parchment paper.
Heat the oven to the highest temperature, drizzle the oil on top, and bake, cooking for 20 minutes (no need to turn the pumpkin slices).
Once the breaded pumpkin is cooked, remove it from the oven and serve it with freshly ground pepper (if you like) and/or fresh parsley (if desired). It’s excellent both hot and cold, enjoy your meal!
